1. Preheat oven to 350 deg F or 176 deg C. Line 9in diameter cake pan with parchment paper and lightly coat with nonstck spray.
2. Whisk flour, sugar, baking powder, and salt in a large bowl.
3. Whisk eggs, ricorra, and vanilla in a medium bowl until smooth. Fold into dry ingredients just until blended.
4. Then fold in melted butter followed by ur favorite fruit mix. Dont crush the berries if you r adding berries. Bananas and durian can be crushed per ur preference.
5. Scrape batter into prepared pan. Scatter remaining berries on top if preferred.
6. Bake cake until golden brown in the oven, insert a tester to check that the tester comes out clean at the end, 50 to 60 mins should be sufficient.
7. Let cool at least 20miins.
8. Cake can be made 2 days ahead, store lightly wrapped at room temperature.
